Quinoa can be eaten raw if it is first soaked and sprouted. It is equally nutritious in sprout form and more versatile way to include it in your diet. Quinoa is a seed that resembles couscous. Quinoa is considered a grain, but it's actually a pseudo-cereal because it is prepared like a cereal grain and provides similar nutrition even though it isn't grain-based.

It has a light texture that resembles couscous, cooks in 15 minutes or less and is available in a variety of types, including black, red or ivory quinoa. Before you prepare quinoa, rinse it thoroughly in several changes of water to remove the bitter natural saponin compound that coats the seeds.
